Wherever you go in Thailand – province, region or village – everyone has a favorite curry, which they firmly believe to be superior to all other. Thailand curries are diverse, and the range can be both bewildering and at time contentious. This huge array is the delicious outcome of the availability of ingredients, the changing seasons, regional variations, different techniques tastes and local customs.
The Thai word for curry ‘geng’ has far wider application than the English approximation suggests. It means any wet savory dish enriched and thickened by a paste. Curries are more specifically called ‘geng ped’ or thickened spicy liquids.
